Summary/Objective

This position is responsible for overseeing the production process of cheese making. The goal of a process operator is to monitor equipment and improve the quality, efficiency and safety of the manufacturing plant. This position follows standard work methods and practices safe work habits to ensure production is as efficient and safe as possible.

Essential Functions

Receiving and Pasteurization Operator duties

• Receive milk and cream, load out whey tankers
• Wash milk, cream, whey tankers when necessary
• Perform antibiotic test (snap Test)
• Prepare mix to company standards
• Start/operate HTST, Perform Cut in/Cut out for state/company check
• Start/operate separator
• Operate Cleaning in place systems Raw and Pasteurize departments
• Clean in Place (CIP) High-Temperature Short Time (HTST), separator, tanks, lines, valves and other equipment
• Perform chemical checks
• Safely operate a forklift

Separator Operator duties

• Wash Maturation Tanks when necessary
• Prepare Curd and Stabilizer to company standards
• Start/operate separator
• Operate Cleaning in place systems to perform Sanitation on Equipment
• Inoculate and follow through culturing process
• Perform Moisture, Temperature and pH checks
• Prepare Starter and Pasteurize and Set Starter
• Monitor all Separators to ensure compliance of product specifications
• Monitor flow, temperature, timing and chemical concentrations during Sanitation
• Add and record rework as necessary

Work Environment: While performing the duties of this job, the employee works in a manufacturing environment with the following conditions:

• Exposure to hot or cold climate frequently;
• Exposure to chemical frequently;
• Exposure to noise and vibration frequently;
• Exposure to wet and humid conditions frequently.

Physical Demands: The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. While performing the duties on the job, the physical demands are:

• Stand – continuously
• Stoop/Bend – frequently
• Squat – frequently
• Crawl – never
• Climb Stairs or ladders – occasionally
• Reach – chest level, above or below – occasionally
• Push - 650 lbs. occasionally (on dolly with help)
• Pull - 650 lbs. occasionally (on dolly with help)
• Lift/carry- 50 lbs. frequently

Required Education and Experience

• For Receiving and Pasteurization Operator - Valid California Pasteurizer’s license within 6 months of starting (Company will pay and arrange for testing)
• High school diploma or equivalent
• Ability to speak, read, write and comprehend English

Preferred Education and Experience

• 1-2 years’ experience in the dairy industry
• Forklift License
• Work with minimum supervision
• Communicate effectively and work with computers
